1-1/4 cups bulgur (found at your local bulk barn or grocery store)
1 stalk celery finely sliced
1/4 cup chopped dried apricots
2 peaches, pitted and diced
1/3 cup shelled pistachios or sliced almonds (I used almonds)
1/2 cup finely chopped parsley
1/3 cup finely chopped mint
4 green onions thinly sliced
Dressing:
Zest of 1 lemon
juice of 1 lemon
3 tbsp olive oil
1/2 tsp salt
1/2 tsp cinnamon
1. Place the bulgur in a medium bowl. Pour 2 cups boiling water over. Cover and let sit for 15-20 mins. Fluff with a fork and place in the fridge to cool.
2. When the bulgur is cool, add the celery, apricots, peaches, nuts, parsley, and mint. Toss well.
3. Drizzle the dressing over the salad and toss well.
4. Add sliced grilled chicken or 1 can drained chick peas to make the salad more of a main dish.
We added grilled chicken cut up into the salad and it was really good! You can also add dried cranberries or currants if you like. Enjoy!
